Don't know the R value but once it gets to the temp of your house, it will hold it for a very long time. Cave homes are one of the most efficient methods of home construction. Your entire house is a geothermal mass. Very easy to maintain a constant temp year-round. The big drawback is there is only one source of natural light and one way out in the event of a fire.

there is neither heat nor A/C. Constant temp. because of the walls, ceiling and floor being rock. I would worry more about moisture.

You would still need heat. In the winter, the deeper you go, the warmer it gets. But 500+ ft down it's only 50-55
