it depends how wide your wheels are and how low your car is.

i have 195/60/15's on my 5-spoke Empis which are 5.5\" wide i think ? stock ride height in the back and no problems at all.

Well, the 5 bolt sprint stars are 5\" wide and the cars not real low in the back.
I had 195 65 15's on my last car with 5 spokes  and no problems....I just need a taller tire with the gearing in this car

check this out from the technical above:

http://www.airspeedparts.com/tech/wheel_sizing.htm

I once ran tires bigger than 205s ( confirmed on my past pictures 225s 60 X 15) on a std  1964 with wide five 5.5X15 chromies without problems.

205 70 15's on empi 5's on my oval. Short axels, but standard spring plates. I think that Darren's 55 had a couple of issues with the adjustable plates on his car though. Not sure what type they are . I'm thinking about running the M&H cheaters 215 65 15's. Saw a set on an oval down at the vegas, they looked pretty bitchin'

I'm running the classic Goodrich T/A 205/70 15's on my 67 (I like my 67) ;) My problem was with the Sway Away adjusters rubbing on the inside of the tire because  the negative offset of the Fuchs was so deep.Had to use spacers & grind the hellout of the adjuster to make er work boyo. How's that neck of yours doin by the way?

Will there be any issues with short axels and offset of the wheels?

No, only issue maybe clearance on the adj spring plates. But offset is not as bad as galloys so no fitment problems should arise.
