OK so the block looks good and after i get it checked it is going to be 78X90.5 for 2007cc.
Now am I obligated to use a perfomance cam (Engle 100, 110) or ca I use stock?
I am concern with heads cracking so what would be my option (price?)
What about compression?
Rocker arms would stock work or do i need to change?
Once built do valves adjustment change from stock adjustment?
Is there any one that has a shop and would coach me on it for how much $$$ fees?

My first 2 liter was built by the PO with a stock cam. What a complete piece of junk!!! Do NOT use a stock cam. You want an Engle W-120. That's a nice mild cam for all around street use.
Heads crack due to overheating. That is controled by your right foot. My recommendation is to get heads based on genuine VW 043 Mexican castings. They have the best exh port of any stock style head, more fin area than a CB 044, and are cast from the strongest alloy. Use 40x35 valves and have Darren port them with his 186cfm port, or slightly smaller.
Set the CR to 8.25:1 and use 87 octane gas.
Use stock 1.1:1 rockers cause that's what you use on a W-120.
Use aircooled.net Al pushrods and set the lash like stock.

Since you're still looking for other input, I'll just say that I agree with the above information.
My current 2017 cc (with 78.4 mm crankshaft) has 8:1 CR, Engle W-120 camshaft (albeit with 1.25 rockers) 87 octane (at $1.00/litre, it's pricey enough!), ACN HD aluminum pushrods and it is very smooth driving around town...009 distributor and bored out 46 mm Kadrons by lowbugget.com.
It's also, lots of fun on the 1/4-mile :D
