I am a Head Chef at a large bank here in the U.K. and have decided to do a Canadian food day at work and i was wondering if you guys or girls had any weird and wonderful recipes that I could use, hopeful of some help :D

I will sound stupid saying this but I can't think of any \"Canadian\" dishes - Poutine maybe?

tortiere. it's a french-canadian meat pie, and i can get the recipe from my grandma tonight. when she used to whip up a couple of batches, our family would literally fight over the last ones.

What about any fish dishes, they always seem quite popular, and I am so  :blink: , I have some in my cupboard MAPLE SYRUP,any recipes using that.

Cedar, Maple and Alderwood grilling planks - You will need 1 15-inch maple ( or other ) plank that has been soaked in water for at least one hour. (Soaking time is not included in the recipe.)
2  teaspoons paprika  
1  teaspoon chili powder  
1  teaspoon dried ancho chile powder  
1/2  teaspoon brown sugar  
1/2  teaspoon cumin  
2  teaspoons kosher salt  
24  ounces salmon fillets  
2  teaspoons maple syrup  

4 servings
 
25 minutes 10 mins prep

Do a search on the net as there are lots of variations - another search would be for Bannock or other west coast native dishes - there is some really nice stuff.

Just a thought, we had some awesome breakfasts when we were there, would I be right in saying that it's eggs,back or streaky bacon, hash browns and pancakes and syrup all on one plate?? sounds good to me.

Next timme you come up James I'll buy beer and ingredients if you\"ll cook sounds like your better than me around the kitchen . Kraft dinner around here more than salmon  :blush: I gotta lear to cook and not just from a box  :lol:

James You hit the nail on the head for the non fish eaters like myself. Poutine is where its at. Have it with a buffalo Burger :)

Thanks guys great response and some great ideas, a couple of the chefs I talked to today figured it would be cool to dress up and serve some of the food, should be a hoot, I'll let you know how I get on. :rockon:  :rockon:
